Turkey Mango Stir-Fry

Ingredients

  • 600 g turkey breast fillet (prepped, skinless)
  • 2 Garlic cloves
  • 1 red chili pepper
  • 1 tsp cane sugar
  • 1 ripe Mango
  • 1 bunch spring onions
  • 2 tbsp sunflower oil
  • Salt
  • ground black pepper
  • 4 tbsp mango chutney (jarred)
  • 4 Tbsp lime juice
  • Cayenne pepper

Instructions

    Wash the meat, pat dry and slice into thin strips. Peel and finely chop the garlic. Wash, deseed, remove white membranes from the chili peppers and cut into fine rings. Mix the garlic, chili rings, sugar with the meat.

    Peel the mango, separate flesh from pit and dice into about 1 cm cubes. Trim and wash spring onions; slice green parts diagonally into 1–2 cm thick rings. Heat oil in a pan and cook the meat strips over high heat, turning, for about 4 minutes.

    Season with salt and pepper. Stir in mango cubes, mango chutney and spring onions and simmer for about 2 minutes. Add lime juice, season with salt and cayenne pepper, then serve.
