Stuffed Oven-Baked Turkey Breast

Experience a delightful Sunday with stuffed turkey breast baked in the oven by Spoonsparrow!

Ingredients

  • 750 g turkey breast fillet (ask the butcher to cut a pocket)
  • Salt
  • coarse pepper
  • 150 g Brown Mushrooms
  • 2 medium apples
  • 100 g turkey bacon (thin slices)
  • 500 g fresh sauerkraut
  • curry powder
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 125 ml apple juice

    Unfold the turkey breast into a flat slab and season with salt and pepper. Wash and core the apples, clean the mushrooms and slice them. Dice the apples. Cut the bacon into large pieces and crisp it in a pan without added fat; add the mushrooms and sauté briefly. Spread half of the bacon‑mushroom mixture on the underside of the turkey breast, top with one third of the sauerkraut and some apple cubes. Season with pepper and curry powder, then cover with the remaining bacon‑mushroom mix.

    Fold the turkey breast back together and secure it with wooden skewers. Heat oil and butter in a large roasting pan, gently brown the roast all around. Add the remaining sauerkraut and apple cubes, pour in the apple juice, cover, and bake in a preheated oven at 200 °C (convection: 180 °C; gas: level 3) for 30–40 minutes. Remove the roast, discard the skewers, and slice it. Season the sauerkraut in the pan with pepper and curry powder to taste, then serve alongside the stuffed turkey breast.
