Turkey Breast with Avocado Cream

Ingredients

  • 1 tbsp honey
  • 1 tbsp sherry
  • 20 g Tomato paste (1 tbsp)
  • Cayenne pepper
  • 2 tbsp corn germ oil
  • 600 g turkey cutlets (4 cutlets)
  • 2 ripe avocados
  • 1 tbsp Lemon Juice
  • 4 stems cilantro
  • 2 Tomatoes
  • Salt
  • Pepper
  • Tabasco
  • 1 tsp Rapeseed oil

Instructions

    Whisk honey, sherry, tomato paste, cayenne pepper and corn germ oil to make the marinade.

    Rinse turkey cutlets under cold water, pat dry, flatten with a mallet, spread the marinade over them and let rest covered for about 30 minutes.

    Meanwhile halve the avocados, remove the pits, scoop out the flesh with a spoon; blend half of it with lemon juice, dice the remaining flesh.

    Wash cilantro, shake off excess water and chop. Briefly blanch tomatoes in hot water, cool, peel, quarter, seed, dice finely and mix with cilantro and diced avocado into the avocado puree. Season with salt, pepper and a touch of Tabasco.

    Brush grill grate with rapeseed oil. Salt turkey cutlets, place on the grill and cook 2–3 minutes per side.

  6. 6.

    Serve the turkey cutlets topped with avocado cream on plates.
