Ingredients
- 400 g tuna (very fresh)
- 1 tbsp freshly chopped mint
- 1 Spring onion
- 2 Tomatoes
- 1 orange
- 4 tbsp sesame oil
- 4 tbsp Lemon juice
- 4 tbsp light soy sauce
- Salt
- ground pepper
- 1 tbsp toasted sesame seeds (for sprinkling)
- Mint leaves (for garnish)

Cut the tuna into fine cubes, season with lemon juice, sesame oil and soy sauce. Trim and finely chop the spring onion. Fillet the orange, catching the juice. Slice the orange fillets into very thin rounds. Wash the tomato, halve it, remove seeds, cut flesh into small cubes.

Mix tomatoes, spring onions, orange slices, orange juice and chopped mint into the tartare; season with salt and pepper. Spoon the tartare into small cups, sprinkle with sesame and garnish with mint leaves.
