Ingredients
- 400 g fresh tuna (ready‑to‑cook, skinless)
- 1 small Shallot
- 0.5 apple (e.g., Granny Smith)
- 1 tsp lemon juice
- 1 tbsp Olive Oil
- Salt
- pepper (from grinder)
- organic rose petals (for serving)
- mayonnaise (or aioli, for serving)
- olive oil (to drizzle)
Instructions

Wash the tuna, pat dry and cut into very small cubes.

Peel the shallot and apple, remove the core from the apple, and dice both into very small cubes.

Combine the diced tuna, shallot, apple, lemon juice, and 1 tbsp olive oil; season with salt and pepper.

Using a ring mold, arrange the mixture on rose petals.

Garnish each portion with a dollop of mayonnaise or aioli and drizzle with olive oil as desired.
