Ingredients
- 2 pears
- 1 onion
- 1 Garlic clove
- olive oil
- 1 tsp brown sugar
- 75 ml dry white wine
- 2 tbsp Apple cider vinegar
- 2 tbsp freshly chopped herbs (e.g., thyme and sage)
- 1 tbsp Lemon Juice
- Salt
- Cayenne pepper
- 4 tuna steaks (about 180 g each)
- olive oil
- black pepper (freshly ground)
Instructions

Peel, quarter, core, and dice the pears. Peel and finely dice the onion and garlic. Sauté both in 2 tbsp hot oil until translucent. Sprinkle with sugar, allow to caramelize slightly, then deglaze with wine. Add pears and vinegar, simmer gently for about 3 minutes. Remove from heat, add herbs, season with lemon juice, salt, and cayenne pepper. Let cool lukewarm.

Preheat the oven on grill mode.

Wash the tuna, pat dry, brush with oil. Grill under the grill as desired for 4-8 minutes, turning occasionally, seasoning with salt and pepper at the end. Serve with the salsa.
