Ingredients
- 600 g tuna fillet
- 2 Garlic cloves
- 2 sprigs parsley
- 2 sprigs coriander leaves
- 100 ml olive oil
- 2 tbsp ground cumin
- Salt
- freshly ground pepper
- 1 tbsp paprika powder
- 50 ml lemon juice
- 50 ml orange juice
- 0.5 tsp whole cane sugar

Wash the tuna, pat dry and cut into 2 cm cubes. Peel and finely chop the garlic. Wash the herbs, shake off excess water, pluck the leaves and finely chop them. Mix 4 tbsp oil with 1 tbsp cumin, pepper and salt. Thread the tuna cubes onto wooden skewers and brush with the cumin oil. Marinate the skewers for 15 minutes.

Meanwhile combine the spices with the herbs and garlic, then add the lemon and orange juice along with the remaining oil. Season with salt and whole cane sugar to taste. Cook the skewers in a hot grill pan for 2–3 minutes on each side, remove, arrange on a plate and drizzle with the herb sauce before serving.
