Tuna Pasta Salad

Ingredients

  • 300 g fusilli (cooked al dente and cooled)
  • 250 g canned tuna in oil, from the organic store
  • 1 cucumber
  • 2 carrots
  • Salt
  • freshly ground pepper
  • 2 tbsp lemon juice
  • 4 tbsp pumpkin seeds
  • pumpkin seed oil

Instructions

    Peel the carrots and cut into sticks. Wash the cucumber, quarter lengthwise and cut into pieces. Toss the fusilli with 2-3 tbsp pumpkin seed oil and the pumpkin seeds. Stir in the lemon juice and 1-2 tbsp water.

    Season with salt and pepper. Mix well, then divide into four bowls. Arrange cucumber, drained tuna, and carrots on top. Serve immediately.
