Ingredients
- 350 g banded pasta
- 50 g fresh black truffles
- 80 g Butter
- Salt
- pepper (ground)
- 40 g freshly grated Parmesan
- 2 tbsp chopped spring onions
Instructions

Cook pasta in plenty of boiling salted water until al dente.

Brush truffles clean and slice into thin strips, finely chop half of the strips.

Drain pasta, reserving 1/2 cup of pasta water.

Combine pasta with butter, chopped truffles, and reserved pasta water; season with salt and pepper.

Plate pasta on warmed dishes, garnish with truffle strips and spring onions, serve immediately.
