Ingredients
- 4 trout (about 500 g each, ready to cook)
- 2 carrots
- 2 parsley roots
- 10 g butter
- 1 splash tarragon vinegar
- 1 lemon (zest)
- 100 ml fish stock (from a can)
- 50 g Heavy cream
- 100 ml White wine
- parsley (½ bunch each)
- dill (½ bunch each)
Instructions

Wash the fish and pat dry.

Clean, peel, and slice the parsley roots and carrots into thin strips.

Heat butter, sauté both vegetables, season with salt and pepper.

Deglaze with vinegar, let evaporate, pour in fish stock, steam for about 8 minutes.

Stir in lemon zest, cream, and wine.

Place the fish on top of the vegetable bed and bake at 175°C for 25 minutes. Wash herbs, finely chop, and sprinkle over the dish.
