Ingredients

  • 4 small trout (300 g each, ready to cook)
  • Salt
  • black pepper (freshly ground)
  • 2 Zucchini
  • 2 ripe plum tomatoes
  • 300 g fresh gooseberries
  • 4 tbsp olive oil
  • 2 tbsp fresh oregano

Instructions

    Preheat the oven to 220°C (428°F) with upper and lower heat.

    Wash the trout, pat dry, and season inside and out with salt and pepper. Wash the zucchini, halve them and slice into thin rounds. Wash the tomatoes, halve them, remove the stem ends and slice into thin rounds as well. Rinse the gooseberries, wash and drain.

    Brush each of four 30x30 cm sheets of aluminum foil with a tablespoon of olive oil, place one trout on each sheet and top with the vegetables and fruit. Sprinkle additional pepper over everything, fold the foil into sealed packets, and place them on a baking tray. Bake in the preheated oven for 30–35 minutes. Remove, open, sprinkle fresh oregano leaves on top, and serve.
