Ingredients

  • 400 blue grapes
  • 0.5 Vanilla bean
  • 100 ml red grape juice
  • 80 g sugar
  • 2 tbsp honey
  • 0.5 untreated lemon (juice)
  • 2 egg whites

Instructions

    Wash the grapes, pat dry and remove them from the stems. Set aside four small stemmed grapes for garnish and place them in the freezer about 30 minutes before serving. Split the vanilla bean lengthwise and scrape out the seeds.

    Boil the juice with sugar, honey, lemon juice, vanilla seeds and grapes, then let it cool. Strain through a sieve. Whisk the egg whites until stiff and fold into the mixture. Pour everything into a pre‑frozen bowl, place in the freezer, and whisk repeatedly to prevent ice crystals from forming. Let it set for about 3 hours.

    Use an ice cream scoop to cut spheres and serve them in decorative dessert bowls. Garnish with the frozen grapes.
