Ingredients
- 250 g sugar
- 200 ml pink grapefruit juice (with pulp)
- 150 ml sparkling wine
- 2 egg whites
- 3 tbsp powdered sugar
- 1 pink grapefruit
- 1 tbsp brown sugar
- sparkling wine

Before serving, fillet the grapefruit and distribute the segments onto four glasses. Sprinkle with sugar and drizzle a little sparkling wine over them. Scoop the sorbet with a spoon dipped in hot water, place it on top, and serve.
