Ingredients
- 4 wheat tortillas (pre‑made)
- 2 sirloin steaks (about 200 g each)
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- Salt
- Pepper
- chili powder
- oregano
- 2 tbsp olive oil
- 1 ball mozzarella (125 g)
- 400 g Tomatoes
- 2 tbsp chopped coriander leaves
- 1 chopped shallot
- Salt
- ground pepper
- 3 tbsp oil
- 100 g Sour cream
- 1 tbsp lime juice

Halve the bell peppers, remove seeds, wash and cut into strips. Peel the onion and slice into wedges.

Heat olive oil in a pan and sear the steaks for about 4 minutes per side, season with salt and pepper, then wrap in foil to keep warm. Sauté onions and peppers in the pan fat over medium heat for 5 minutes, seasoning heavily with salt, pepper, chili powder, and oregano.

Cut mozzarella into cubes. Briefly blanch tomatoes, shock, peel, quarter, deseed, and dice. Mix tomatoes with chopped shallot, 1 tbsp coriander, and oil; season with salt and pepper.

Whisk sour cream with remaining coriander and lime juice.

Warm tortillas in a preheated oven at 250 °C for a few minutes.

Slice the cooked meat into strips and mix with the vegetables and mozzarella.

Fill tortillas with the mixture, fold them, and serve topped with tomato salsa and sour cream. Pair with rice and black beans.
