Tortilla Chip Soup

Ingredients
- 1 can corn
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 1 Garlic clove
- 1 chili pepper
- 100 g cheddar (shredded)
- 750 ml vegetable broth (add more if needed)
- 100 ml heavy cream
- 1 large chicken breast fillet
- Salt
- Pepper
- paprika powder
- parsley
- tortilla chips
Instructions

Peel the onion and garlic, finely chop them, add to a pot with drained corn and broth, bring to a boil. Wash, halve, seed, remove membranes from bell peppers and chili, cut into small pieces, add to broth and simmer for about 10-15 minutes; add more broth if needed.

Cut the chicken into cubes or strips, season with salt and pepper. Puree the soup finely and strain through a sieve. Transfer to another pot, add more broth if necessary, reheat. Add the chicken and let it cook until done, stir in cheese until melted in the soup. Season with salt, pepper, and paprika, serve in bowls garnished with tortilla chips and parsley.
