Ingredients
- 2 white bread slices
- 4 tbsp butter
- Salt
- 2 Garlic cloves
- 1 Shallot
- 2 tbsp flour
- 150 ml dry white wine
- 600 ml Vegetable Broth
- 200 ml whipping cream
- 200 g Edam cheese
- Pepper
- ½ handful chives

Remove crusts from the bread and brown in a small pan with 2 tbsp butter until golden. Lightly salt.

Peel the garlic and shallot, finely dice both. Sauté in remaining butter until translucent. Sprinkle flour over, cook until pale yellow, then gradually add dry white wine while stirring. Continue to stir and pour in remaining wine and broth. Simmer for about 2 minutes, then add cream. Grate cheese and fold into the soup. Season with salt and pepper.

Wash chives, pat dry, cut into rings. Ladle soup into bowls and garnish with chives and bread cubes.
