Ingredients
- 500 g colorful tortellini (vacuum sealed, vegetable filling)
- 4 Spring Onions
- 5 cherry tomatoes
- 150 g unsmoked meat sausage (e.g., Italian mortadella)
- 2 tbsp basil (finely chopped)
- Salt
- Pepper (freshly ground)
- 3 tbsp Lemon juice
- 4 tbsp plain yogurt
- 2 tbsp mayonnaise

Cook the tortellini according to package instructions, drain and let cool. Wash and trim the spring onions, cut into 1–2 cm rings including the green parts. Rinse the tomatoes, halve them, remove the stems, and chop into pieces.

Whisk together yogurt, mayonnaise, lemon juice, basil, salt, and pepper. Place the cooled tortellini in a salad bowl with the spring onions and tomatoes, then toss with the dressing. Season again with salt, pepper, and optionally more lemon juice. Dice the mortadella into small cubes and fold them into the salad. Let rest for 5 minutes, stir once more, and serve garnished with basil leaves.
