Tortellini in Cream Sauce

Ingredients
- 300 g flour
- 4 eggs
- water (if needed)
- Salt
- 50 g raw ham
- 2 tbsp butter
- 1 onion
- 250 g ground meat
- 1 tbsp breadcrumbs
- 2 Tbsp grated Parmesan
- 1 egg yolk
- 200 g peas (frozen)
- 150 g ham

- 1 Tbsp starch
- 200 ml whipping cream
- 50 ml Vegetable broth
- grated Parmesan (for sprinkling)
- parsley (for garnish)
Instructions

Quickly knead the dough ingredients into a pasta dough, shape it into a ball, wrap in foil and let rest for 30 minutes.

For the filling, peel and finely chop the onion, sauté in butter, add diced ham, cook briefly. In a bowl mix ground meat, breadcrumbs, Parmesan, egg yolk, salt and pepper.

Roll out the dough on a floured surface to thin sheets, cut into ~5-6 cm squares. Place 1 tsp filling in each square, fold into triangles, press edges together. Twist each triangle around your index finger, pinch ends tightly, flip over with the other hand, pull off the finger and place on a floured kitchen towel.

Thaw peas. Dice ham. Dice onion. Heat butter in a pan, sauté onion, add peas, cook briefly. Dust with starch, pour in cream and vegetable broth, simmer gently for about 3 minutes.

Cook tortellini in simmering water for 5 minutes, then drain and mix with sauce. Sprinkle Parmesan, plate on bowls, garnish with parsley.
