Ingredients

  • 120 g hazelnuts
  • 70 g brown sugar
  • 150 g honey
  • 150 g dark chocolate
  • 70 g milk chocolate
  • 2 egg whites
  • 1 pinch salt
  • 3 square baking sheets

Instructions

    Preheat the oven to 200°C (400°F) with upper and lower heat. Place the nuts on a sheet lined with parchment paper and roast in the oven for about 8 minutes. Then transfer them onto a kitchen towel and rub together until the skins are removed.

    Dissolve the sugar and honey with about 70 ml water over low heat. Add both types of chocolate and melt. Beat the egg whites with salt into stiff peaks.

    Line a rectangular pan approximately 20x25 cm with 1-2 baking sheets. Stir the nuts into the chocolate mixture and fold in the meringue. Spread the batter onto the sheets and smooth the surface. Cover with more sheets and refrigerate for at least 5 hours until firm. Cut into about 2 cm cubes before serving.
