Tomatoes with Pesto

Ingredients

  • 50 g Pine nuts
  • 2 Garlic cloves
  • 2 bunches flat-leaf parsley
  • Salt
  • 100 ml olive oil
  • 50 g freshly grated Parmesan
  • black pepper (from the mill)
  • 500 g ripe tomatoes
  • 75 g black olives

Instructions

    Roast the pine nuts in a dry pan until lightly golden. Peel and roughly chop the garlic.

    Wash the parsley and shake off excess water. Set aside some leaves for garnish, then crush the rest with the pine nuts, garlic, 1 tsp salt, and about half the oil in a mortar or blend in a mixer. Gradually stir in the remaining oil and cheese. Season with salt and pepper to taste.

    Wash the tomatoes and slice them without cutting off the stems. Arrange on a platter or individual plates. Sprinkle a little salt and freshly ground pepper over them.

    Spoon the parsley pesto over the tomatoes. Pit the olives if desired, add them to the salad, and scatter the remaining parsley leaves on top. Serve as soon as possible.
