Ingredients

  • 1 small Shallot
  • 2 Garlic cloves
  • 7 tbsp olive oil
  • 50 g whole canned tomatoes
  • 5 tbsp vegetable broth (optional)
  • 7 tbsp white balsamic vinegar
  • Salt
  • Pepper (freshly ground)

Instructions

    Peel and finely chop the shallot and garlic. Sauté briefly in three tablespoons of olive oil until translucent.

    Add the onions, garlic, tomatoes, and a splash of vegetable broth to a tall mixing bowl and puree with an immersion blender. Stir in the remaining olive oil and season with vinegar, salt, and pepper.

    Adjust thickness by adding more broth or vinegar as desired.
