Garlic Herb Salad Dressing

A fresh salad dressing featuring wild garlic from Spoonsparrow that is always a hit.
Ingredients
- 2 Tomatoes
- 2 shallots
- 1 handful of wild garlic
- 4 tbsp white balsamic vinegar
- 1 tbsp Lemon Juice
- 100 ml Vegetable broth
- 1 pinch sugar
- 5 tbsp olive oil
- Salt
- ground pepper
Instructions

Heat the tomatoes briefly, then cool, peel, quarter, seed, and dice them. Peel and finely chop the shallots. Wash, trim, and slice the wild garlic into strips.

Whisk together the balsamic vinegar, lemon juice, broth, sugar, and olive oil. Season with salt and pepper. Fold in the diced tomatoes and sliced wild garlic, then serve.
