Ingredients

  • 4 flesh tomatoes
  • Salt
  • 4 Garlic cloves
  • 1 onion
  • 4 Tbsp breadcrumbs
  • 3 tbsp olive oil
  • 1 tbsp white balsamic vinegar
  • 4 sprigs Rosemary
  • 3 stems basil
  • 1 pinch chili powder
  • 12 tbsp tapenade
  • 24 thin slices scamorza
  • Pepper

Instructions

    Wash the flesh tomatoes and cut each into 5 slices. Lightly salt each slice. Peel and finely chop the garlic cloves and onion. Mix both with the breadcrumbs, olive oil, and vinegar.

    Pick a few rosemary needles and finely chop them. Take 4 basil leaves and also finely chop them. Add the rosemary needles and chili to the onion mixture. Fold the chopped basil into the tapenade.

    Layer the tomatoes alternately with tapenade, scamorza slices, and the onion mixture. Lightly pepper while assembling. Slice the remaining basil into very fine strips and garnish the tomato towers with these basil strands and rosemary sprigs before serving.
