Ingredients

  • 5 sprigs basil
  • 1 sprig rosemary
  • 1.2 kg tomatoes
  • 6 shallots
  • 60 ml mild olive oil
  • 4 tbsp balsamic vinegar
  • Salt
  • Pepper (freshly ground)
  • coarse Sea salt

Instructions

    Wash the basil and shake dry. Pull leaves from the stems and cut 5 leaves into thin strips. Set aside remaining leaves for garnish. Wash rosemary and chop needles. Wash tomatoes, remove stem ends. Blanch tomatoes in boiling water for about 30 seconds, then cool rinse and peel skin off. Quarter tomatoes, deseed and dice small.

    Peel shallots and finely dice. Mix half the shallots, rosemary and 10 ml olive oil with tomato cubes. Combine remaining olive oil with vinegar, leftover shallots and basil strips. Season with salt and pepper. Spread on plates and arrange tomato tartar into towers using dessert rings. Sprinkle coarse sea salt and garnish with basil leaves.
