Ingredients
- 3 tbsp fine bulgur
- 4 tomatoes
- 5 handfuls parsley (150 g)
- 1 lemon (juice)
- 1 pinch ground cumin
- 1 pinch ground coriander
- 5 tbsp olive oil
- Salt
- pepper (from the mill)

Cover the bulgur with lukewarm water and let it soak for about 20 minutes.

Wash the tomatoes, remove the stems, and dice them finely. Rinse the parsley, pluck the leaves, and chop them small. Squeeze the lemon to get its juice and whisk the juice with cumin, coriander, olive oil, salt, and pepper in a small bowl.

Drain the bulgur in a sieve and press it dry. Mix it with the tomatoes and parsley, fold in the dressing, and adjust seasoning.
