Tomato Salad with Toasted Bread

The tomato salad with toasted bread from Spoonsparrow is especially tasty as a fruity starter or side dish for grilled items.

Ingredients

  • 2 Zucchini
  • 450 g cherry tomatoes
  • 3 red onions
  • 80 g Black olives
  • 4 sprigs thyme
  • 1 handful basil
  • 150 g Feta
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp white balsamic vinegar
  • 120 ml olive oil
  • 6 slices country bread
  • 100 g Arugula

Instructions

    Wash the zucchini, dry and grate them, trim the ends and slice thinly. Wash the tomatoes and halve large cherry tomatoes. Peel the onions, cut into wedges or large pieces. Drain the olives. Rinse the herbs, shake dry and crumble the feta roughly. Place all ingredients in a large jar, season with salt and pepper, add the vinegar and olive oil, seal the jar and shake vigorously to mix.

    Let the mixture rest for at least 30 minutes. Quickly toast the bread on a hot grill. Taste the salad again and spread it over the toasted slices. Garnish with washed arugula and basil.
