Spinach and Goat Cheese Salad

The spinach and goat cheese salad from ➸ Spoonsparrow is always really good.

Ingredients

  • 250 g baby spinach
  • 4 tomatoes
  • 150 g firm goat cheese (or feta)
  • 60 g almond kernels
  • 3 tbsp white wine vinegar
  • 5 tbsp olive oil
  • Salt
  • Pepper

Instructions

    Wash, trim and spin dry the spinach. Wash the tomatoes, quarter them, trim and cut into thin strips. Crumble the feta. Roast the almonds in a hot, dry pan until fragrant, then remove, cool and chop.

    Whisk the vinegar with the oil and season with salt and pepper to make the vinaigrette.

    Combine all prepared salad ingredients, divide among four bowls, and drizzle with the vinaigrette. Serve with toasted whole‑grain bread slices.
