The tomato salad from Spoonsparrow is a tasty summer recipe for anyone still working on their bikini figure.

Ingredients

  • 250 g mixed leafy greens (e.g., Lollo Rosso, young spinach and Swiss chard leaves, arugula, nasturtium)
  • 400 g mixed cherry tomatoes (red, orange, yellow and green)
  • 4 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • Salt
  • Pepper

Instructions

    Rinse, wash, clean and spin dry the salad. Wash the tomatoes, drain them and cut into halves or quarters as desired.

    Mix the salad with the tomatoes and arrange in a bowl. For a vinaigrette whisk together oil, vinegar, salt and pepper, drizzle over the salad and serve.
