Tomato-Root-Beet Gratin

Ingredients
- 1 root beet (about 1 kg)
- 1 onion
- 1 bunch parsley
- 4 tomatoes
- 2 tbsp butter
- Salt
- ground pepper
- 1 tsp ground cumin
- nutmeg
- 200 g whipping cream
- 150 g crème fraîche
- 50 g breadcrumbs
- 150 g grated hard cheese
Instructions

Peel the root beet and shave into thin slices.

Peel and finely chop the onion.

Slice the tomatoes.

Sauté the onion in 1 tbsp hot butter until translucent, then stir in parsley and cook briefly more.

Layer the beet slices and tomatoes in a greased baking dish, seasoning with salt, pepper, cumin, and nutmeg.

Whisk together the cream, crème fraîche, and onion mixture, pouring it over the beets.

Combine breadcrumbs with cheese and sprinkle over the casserole; dot with remaining butter pieces. Place in a cold oven and bake on the middle rack at 180°C for about 45 minutes.
