Tomato Relish

Ingredients

  • 1 kg ripe tomatoes
  • 100 g Onions (2 onions)
  • 2 Garlic cloves
  • 1 chili pepper
  • 4 tbsp olive oil
  • 2 tsp Tomato paste
  • 2 tbsp Red wine vinegar
  • 1 tbsp chopped basil
  • 2 tbsp balsamic vinegar
  • Salt
  • 1 tsp Honey

Instructions

    Bring water to a boil for the tomatoes. Rinse the screw-top jars in hot water and let them drain on a kitchen towel.

    Wash the tomatoes, score them crosswise, blanch in boiling water, shock, peel, quarter, core, and dice.

    Peel and finely dice the onions and garlic cloves. Wash and finely chop the chili pepper.

    Heat the oil in a large pot and sauté the chili pepper with onions and garlic in hot oil; stir in tomato paste and deglaze with red wine vinegar. Add the tomatoes and simmer for about 10 minutes over low heat, stirring occasionally. Finally add basil, refine with balsamic vinegar, and season with sea salt and honey.
