Tomato Quinoa

Ingredients

  • 8 tomatoes
  • 2 onions
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 30 g Tomato paste
  • 700 ml vegetable broth
  • 350 g quinoa
  • 40 g parsley (2 bunches)
  • Salt
  • Pepper
  • 0.5 tsp ground cumin
  • 1 tsp curry powder

Instructions

    Briefly blanch tomatoes in boiling water, remove, rinse cold, peel skin and roughly chop flesh.

    Peel onions and garlic. Slice onions into thin slivers and garlic into thin rounds.

    Heat oil in a pot. Sauté onions, garlic, and tomato paste over high heat for 2 minutes. Add broth and stir.

    Rinse quinoa with water, add to the broth, and simmer for about 15 minutes.

    Meanwhile wash parsley, shake dry, and chop.

  6. 6.

    Season quinoa with salt, pepper, cumin, and curry. Add tomatoes and fold in parsley.
