Tomato Ketchup for the Thermomix

Ingredients

  • 650 g ripe tomatoes (preferably organic)
  • 150 g onions
  • 1 dried chili pepper
  • 3 Garlic cloves
  • 5 allspice berries
  • 1 cinnamon stick
  • 2 star anise
  • 100 ml red wine vinegar
  • 50 g raw cane sugar
  • 10 g cornstarch (2 tsp)

Instructions

    Wash the tomatoes, halve them and remove the stems.

  2. 2.

    Peel and halve the onions; peel the garlic.

  3. 3.

    Add everything to the mixing bowl and chop for 6 seconds on level 7.

  4. 4.

    Add the crushed chili pepper and remaining spices to the bowl and simmer for 10 minutes at 100 °C on level 2. While it cooks, whisk the cornstarch into a little cold water until smooth if desired.

    Add vinegar, sugar and, if desired, the starch mixture, then cook for another 15 minutes in Varoma mode on level 1.

  6. 6.

    Finally puree for 40 seconds on levels 5–9, gradually increasing. Pour the hot ketchup into sterilized screw‑top jars or bottles and seal immediately.
