Ingredients

  • 2000 g tomatoes (5 cans)
  • 500 g tomatoes
  • 2 shallots
  • 1 stalk of celery
  • 50 g celery root
  • 1 Carrot
  • 1 Garlic clove
  • 250 g lean beef
  • 4 egg whites
  • 2 tbsp salt
  • 1 tbsp peppercorns
  • 2 tbsp sugar
  • 1 bay leaf
  • 500 g ice cubes

Instructions

    Drain the canned tomatoes.

    Wash fresh tomatoes, remove stems, roughly chop and mix with canned tomatoes.

    Peel and roughly cube shallots, celery stalk, celery root, carrot, and garlic. Cube the beef and grind it together with the vegetables using a meat grinder. Stir in egg whites, salt, pepper, sugar, peppercorns, and bay leaf, then combine with the tomatoes in a large pot. Add 2.5 liters of cold water and let infuse overnight in the refrigerator.

    Place the pot on the stove and bring to a boil while stirring occasionally. Then simmer gently for about 4-5 hours without stirring further. Finally, carefully strain through a sieve, season with salt, and serve.

    The consommé can be stored in sealable jars for several days.
