Ingredients
- 800 g tomatoes (ripe)
- 1 Shallot
- 1 Garlic clove
- 2 stalks lemon thyme
- 1 stalk oregano
- 4 tsp olive oil
- Salt
- 1 tsp sugar
- black pepper (freshly ground)
- 1 pinch chili powder
- 0.5 mozzarella ball (cut into small cubes)
- fresh oregano (for garnish)
Instructions

Wash and chop tomatoes. Peel and finely mince shallot and garlic, then sauté in 2 tsp hot oil. Add tomatoes and herbs, cook briefly, add about 150 ml water, simmer for ~10 minutes. Transfer to a blender, puree until smooth. Season with salt, sugar, pepper, and chili powder. Refrigerate overnight.

Before serving, stir well, season again if needed, then serve in glass bowls. Drizzle with olive oil and garnish with mozzarella cubes and oregano leaves as desired.
