Colorful Vegetable Skewers

Ingredients

  • 1 Zucchini
  • 1 eggplant
  • 1 red bell pepper
  • 1 onion
  • 4 stems oregano
  • 6 tbsp Olive oil
  • Salt
  • Pepper
  • 8 skewers

Instructions

  1. 1.

    Wash, trim and cut zucchini and eggplant into about 1 cm thick slices. Halve or quarter the eggplant slices; halve the zucchini slices depending on size.

    Wash the bell pepper, halve it, peel and cut into bite‑sized pieces. Peel the onion, quarter lengthwise and separate into individual skins.

  3. 3.

    Thread all ingredients alternately onto skewers and place them closely together in a shallow bowl.

  4. 4.

    Rinse oregano, shake dry and chop leaves. Mix oil with salt, pepper and oregano.

  5. 5.

    Drizzle the seasoned oil over the vegetable skewers. Cover and marinate for about 1 hour, turning occasionally.

    Drain the skewers. Grill on a hot grill, turning occasionally, for about 8 minutes.
