Tomato Chicken

Ingredients
- 1 chicken (pre-cooked, about 1.4 kg)
- 500 g tomatoes
- 1 stalk Celery
- 1 onion
- 2 Garlic cloves
- Salt
- pepper (ground)
- Sweet Paprika Powder
- olive oil
- 100 ml dry white wine
- 150 ml Vegetable broth
- 2 tbsp coarsely chopped parsley
Instructions

Wash the chicken, pat it dry and cut into 8 pieces. Wash the tomatoes, remove the stems and quarter them.

Wash, trim and dice the celery. Peel and finely chop the onion and garlic.

Season the meat with salt, pepper and paprika and brown it in a hot pan with oil all over. Remove and set aside. Sauté the onion and garlic in the drippings until translucent. Add the celery and cook briefly.

Then stir in the tomatoes, deglaze with wine and broth, season, stir in tomato paste, return the chicken pieces (except the breast) and simmer on medium heat for about 40 minutes. Halfway through add the breasts and continue cooking. If needed, add more broth.

Season with salt and pepper, plate, and serve sprinkled with parsley.
