Ingredients
- 2 onions
- 2 Garlic cloves
- 2 carrots
- 2 tbsp olive oil
- 8 tomatoes
- 2 tbsp Tomato paste
- 600 ml Vegetable Broth
- 60 ml heavy cream
- 1 pinch sugar
- 1 tbsp white balsamic vinegar
- Salt
- Cayenne pepper
- basil (for garnish)
Instructions

Peel and dice the onions, garlic, and carrots. Sauté together in hot oil for 1-2 minutes until colorless.

Wash the tomatoes, remove stems, and cut into pieces. Add tomato paste to the vegetables, then add tomatoes with broth. Cook gently for about 20 minutes while stirring occasionally.

Blend finely and strain through a sieve. Bring back to a boil and reduce if desired or add more broth. Stir in cream and season with sugar, balsamic vinegar, salt, and cayenne pepper.
