Ingredients

  • 1 l meat broth
  • 1 bundle chives
  • 40 g soft butter
  • 75 g Semolina
  • 1 egg
  • Salt
  • Nutmeg (freshly grated)
  • 1 tbsp finely chopped parsley

Instructions

    For the semolina dumplings beat the butter until fluffy and fold in some semolina. Then add the eggs and gradually stir in the remaining semolina. Season with salt and nutmeg, fold in the parsley, and let the dough rest for at least 20 minutes.

    Bring the broth to a boil, drop in the semolina dumplings, and simmer gently for about 15 minutes.

    Wash the chives, dry them, and cut into fine ribbons.

    Plate the soup with the dumplings on bowls and sprinkle with chives before serving.
