Tomato and Cheese Pizza

Ingredients
- 10 g yeast (0.25 cube)
- 1 pinch sugar
- 220 g flour
- 4 tbsp olive oil
- 1 tsp salt
- 600 ripe tomatoes
- 1 tbsp Tomato Paste
- 1 Shallot
- 1 Garlic clove
- 2 tbsp olive oil
- 300 g mozzarella
- Salt
- ground pepper
- 0.5 tsp Dried oregano
- 2 tbsp olive oil
- tomato slice
- black olives
- oregano leaf

Crush the yeast into a bowl and stir with about 100 ml lukewarm water and sugar until smooth, then add flour, olive oil and salt and knead everything into a supple dough. Cover and let rise in a warm place for about 1 hour.

Shape the dough into two balls, roll each into a thin disc of about 22 cm diameter on lightly floured surface, leave the edge slightly thicker and place on a greased baking tray.

Blanch the tomatoes, peel and chop finely. Peel and finely dice the shallot and garlic, sauté in 2 tbsp olive oil, add tomatoes and tomato paste, simmer for about 15 minutes, season with oregano, salt and pepper, let cool slightly, spread over the pizza bases leaving a small border. Slice mozzarella thinly, lay on top of the tomatoes and drizzle with a little olive oil.

Bake in preheated oven (bottom rack, 225°C) for about 15–20 minutes, remove and optionally top with fresh tomato slices, oregano and olives, serve immediately.
