Grilled Tomato Mozzarella Pizza

Ingredients

  • 1 cube yeast
  • 600 g flour (and a little extra for the work surface)
  • Salt
  • 2 tbsp olive oil
  • 125 g mozzarella (9% fat)
  • 10 tomatoes
  • 2 cloves garlic
  • Pepper
  • 3 stems basil

Instructions

    Dissolve yeast in 300 ml lukewarm water. In a bowl mix flour with 1 tsp salt, create a well in the center. Pour in yeast mixture and oil, knead into a smooth dough. If too wet add more flour; if too dry add a splash of lukewarm water. Knead on floured surface for about 10 minutes, return to bowl, cover and let rise in a warm spot for ~1 hour.

    Drain mozzarella, slice thinly. Boil tomatoes briefly, cool, peel, quarter, seed, and dice finely. Peel garlic, crush into tomato cubes, season with salt and pepper.

    Preheat grill. Punch down dough, divide into four equal portions, roll out on lightly floured surface. Place pizzas on hot grill for 4–5 minutes, flip, top with mozzarella slices and tomato cubes. Close grill or cover with foil, bake another 5 minutes until cheese melts.

    Wash basil, shake dry, pluck leaves and chop. Sprinkle over finished pizzas.
