Ingredients
- 250 g flour
- 140 cold butter
- 6 Eggs
- Salt
- pepper (ground)
- 150 g cherry tomatoes
- 125 g mozzarella
- 50 g grated Gruyère cheese
- 50 g passata
- 100 g whipping cream
- 2 tbsp chopped mixed herbs (e.g. basil, thyme, rosemary)
- 1 muffin tin (with 12 cavities)
Instructions

Knead flour with cold butter in small pieces, 1 egg and a pinch of salt into a smooth dough and cover for about 30 minutes in the refrigerator.

Wash tomatoes and roughly chop them. Cut mozzarella into small cubes.

Whisk remaining eggs with cream, stir in Gruyère and herbs, season with salt and pepper, then fold in tomatoes, passata and mozzarella.

Shape dough into 12 equal balls and roll out on a lightly floured surface (about 10 cm diameter). Line the greased muffin tin cavities with them. Spoon the tomato‑egg mixture onto each ball and bake at 220 °C for about 30 minutes. Remove from the tin and serve.
