Ingredients
- 500 g Tofu
- 3 tbsp Lime juice
- 2 tbsp hoisin sauce
- 3 tbsp Soy sauce
- 200 g mushrooms
- 2 young leeks
- 1 Garlic clove
- 2 cm ginger
- 2 tbsp peanut oil
- 50 g cashews
- pepper (ground)

Cut the tofu into bite-sized cubes. Mix with 2 tbsp lime juice, hoisin sauce and 2 tbsp soy sauce; cover and refrigerate for at least 4 hours.

Clean the mushrooms and slice them. Wash and trim the leeks, then cut into rings. Peel and finely chop the garlic and ginger.

Remove the tofu from the marinate and brown it in a hot wok with oil all around. Take it out and sauté the garlic with ginger in the same wok. Add the mushrooms and cook 2‑3 minutes. Add cashews and leeks, stir for another 2‑3 minutes. Return the tofu, add a splash of its marinade, lime juice, soy sauce and pepper to taste, then serve.
