Tofu Sticks with Lime Dip

Ingredients
- 400 g Tofu
- 100 g whole‑grain breadcrumbs
- 1 tsp Sweet paprika powder
- 1 tbsp Olive Oil
- Salt
- Pepper
- 4 tbsp corn starch
- 150 ml soy drink (soy milk)
- 1 Organic Lime
- 0.5 bunch Parsley (10 g)
- 200 g soy yogurt
- a pinch cayenne pepper

Drain the tofu and cut into 2 cm thick strips. In a bowl mix whole‑grain breadcrumbs, paprika powder, olive oil, salt and pepper. Place corn starch and soy milk in separate bowls.

Coat each tofu strip first in corn starch, then in soy milk, and finally roll it in the breadcrumb mixture. Arrange the strips on a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C (convection: 200 °C; gas: level 3–4) for 10 minutes until crispy.

For the dip, rinse the lime hot, dry it, grate its zest and squeeze half of its juice. Wash the parsley, shake off excess water, and finely chop it. In a bowl combine soy yogurt with parsley, salt, cayenne pepper, lime juice and zest, stirring well.

Remove the tofu sticks from the oven and serve them with the dip.
