Apple Walnut Slices
Crispy apple-walnut slices with rolled oats: a hearty crunch packed with valuable unsaturated fatty acids – the perfect alternative to cake for coffee and tea!
Ingredients
- 0.5 organic lemon
- 150 g Whole wheat flour
- 200 g rolled oats
- 50 g raw cane sugar
- 1 pinch salt
- 2 large eggs
- 200 g butter (room temperature)
- 100 g dried apple rings
- 40 g walnut kernels
- 2 tbsp apple jelly
Instructions

Rinse the lemon hot, dry it and finely grate the zest.

Mix flour, oats, sugar, lemon zest and a pinch of salt in a bowl.

Add eggs and butter and work into dough with hand mixer attachments until crumbly.

Then knead by hand into a smooth ball and divide in half.

Line a baking sheet with parchment paper. Place one dough half on it, cover with cling film, roll very thin with a rolling pin. Lay the other half on cling film, cover with another layer and roll thin as well.

Store dough sheets in the fridge for about an hour. Then place one dough half on the baking sheet with roughly half the apple rings and put a walnut half in the center of each.

Remove the top cling film from the second dough sheet. With the help of the second layer, lay this sheet over the topped dough and press firmly. Remove remaining film.

Bake in preheated oven at 180 °C (convection 160 °C, gas: level 2–3) on the middle rack for about 15 minutes.

Distribute the remaining apple rings over the pastry.

Warm apple jelly in a small pot, brush the still warm pastry with it and cut into pieces. Let cool on a cutting board.
