Tofu in Bean Sauce

Ingredients
- 600 g tofu
- 2 cm fresh ginger
- 1 Garlic clove
- 2 EL peanut oil
- 1 TL coriander seeds
- 1 TL Sichuan peppercorns
- 3 EL soy sauce
- 1 TL black bean paste
- 400 g brown beans (canned)
- 2 Spring Onions
- chili flakes

Cut the tofu into bite‑size cubes. Peel and finely chop the ginger and garlic. Together with the tofu, stir‑fry in a hot wok with oil for about 4 minutes. Crush the coriander and Sichuan peppercorns in a mortar and let them steam briefly. Deglaze with 2–3 EL soy sauce and a splash of water. Stir in the paste and add the drained beans. Simmer for 5–6 minutes, seasoning with additional soy sauce.

Wash, trim, and slice the spring onions into thin rings. Sprinkle chili over the tofu and serve.
