Ingredients

  • 8 slices baguette
  • 4 tbsp olive oil
  • 4 tomatoes
  • 2 shallots
  • 1 tbsp capers
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 150 g cream cheese
  • 2 tbsp chives
  • 1 tbsp fresh basil, chopped
  • 2 tbsp heavy cream
  • 1 tbsp Crème fraîche
  • 8 anchovy fillets

Instructions

    Toast baguette slices in 2 tbsp oil in a non-stick pan until crisp on both sides. Briefly blanch tomatoes in boiling water, shock, peel, quarter, seed and dice. Peel and finely chop shallots.

    Combine remaining oil and capers with tomato cubes. Season with lemon juice, salt and pepper. Mix cream cheese with herbs, heavy cream and crème fraîche; season with salt and spread on crostini. Top with tomatoes and decorate each with an anchovy fillet. Serve immediately.
