Ingredients

  • 3 EL olive oil
  • 1 TL dried herbs de Provence
  • Salt
  • Pepper (freshly ground)
  • 4 small pork loin steaks (about 80 g each)
  • 3 tomatoes
  • 100 g sheep cheese
  • 1 ball mozzarella
  • 40 g Butter
  • 8 slices toast bread
  • 8 salad leaves
  • herbs (for garnish)

Instructions

    Preheat the oven to 250°C with upper and lower heat. Mix oil with herbs, salt and pepper and brush the steaks with this mixture. Wash the tomatoes, remove the stem ends and slice them. Crumble the sheep cheese. Drain the mozzarella and cut it into slices. Sear the steaks in a hot pan with melted butter, about 1 minute per side.

    Toast the bread slices until golden yellow. Line a baking sheet with foil. Top the steaks with tomatoes, sheep cheese and mozzarella, then place them on the foil. Bake in the preheated oven for about 4 minutes to gratinate. For serving spread butter on the toast slices, top with salad leaves and place the gratinated steaks on top. Garnish with herbs as desired.
