Hearty Stuffed Onions

Ingredients

  • 4 vegetable onions
  • 2 tbsp butter
  • 300 g blood sausage
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp thyme leaves
  • 125 ml instant meat broth
  • 700 g potatoes
  • Salt

  • 100 g whipping cream
  • 8 tbsp butter
  • 1 bunch herbs

Instructions

    Peel the onions and cook in lightly salted water for about 15 minutes, then drain. Cut off a lid from each onion and hollow out the interior with a small spoon.

    Take one‑third of this onion mixture and chop it slightly. Peel the blood sausages and cut them into cubes. Melt butter. Sauté the chopped onion mixture until translucent, add the sausage, quickly brown everything, season with salt and pepper, and stir in thyme.

    Fill the onions with the mixture and place them in a greased baking dish; pour in the meat broth. Cover with foil and bake at 180 °C for about 30 minutes on medium heat.

    Peel, wash, and cut potatoes into small pieces; simmer in salted water covered for roughly 25 minutes until tender.

    Wash herbs, dry, shake off excess water, and finely chop. Drain potatoes and let them steam a bit, then add butter and cream and mash with a potato masher into a purée. Season with salt and pepper and fold in the herbs.

    Plate the stuffed onion with herb purée and serve immediately.
