Thin Pasta with Sea Bass

Ingredients
- 400 g linguine (flat spaghetti)
- Salt
- 2 tsp sesame oil
- 500 g sea bass fillet
- 2 carrots
- 2 small zucchini
- 1 red bell pepper
- 3 shallots
- 2 Garlic cloves
- 3 tbsp germination oil
- 2 tbsp fish sauce
- 2 tbsp Soy sauce
- 2 tbsp vinegar
- 1 tsp cane sugar
Instructions

Cook the pasta in plenty of boiling salted water until al dente. Drain, let it drip, and toss with sesame oil.

Wash, pat dry, and cut the sea bass fillet into bite-sized pieces. Wash, peel, and julienne the carrots, zucchini, and bell pepper. Peel and slice the shallots and garlic.

Heat 2 tbsp oil in a pan and sauté the fish for 2 minutes while stirring; remove and season with fish sauce. Heat the remaining oil and sauté the shallots and garlic until translucent. Add the carrot, zucchini, and pepper strips and cook for 4 minutes, stirring.

Stir in soy sauce, vinegar, and sugar. Add the pasta and a cup of water, mixing well. Fold in the fish pieces and warm through. Plate and serve.
