Ingredients

  • 0.5 cube fresh yeast (21 g)
  • 250 g wheat flour (Type 550)
  • 0.5 tsp Salt
  • flour for dusting
  • 1 egg yolk
  • 2 tbsp caraway seeds

Instructions

    Dissolve the yeast in 160 ml lukewarm water. Knead with flour and salt into a smooth dough that releases from the bowl edges. Dust with flour and cover with a damp kitchen towel, letting rise for about 20 minutes.

    Let the dough rise another 60 minutes, shaping it into a rectangle on a well-floured surface every 20 minutes using your palm, then fold twice.

    Preheat the oven to 240 °C (top and bottom heat). Shape the dough into three thin rolls on a floured surface, cover with a damp cloth, and let rise again for 15 minutes. Brush with egg yolk and sprinkle caraway seeds. Bake on a parchment-lined tray in the preheated oven for about 20 minutes until golden brown.
